Ruby Spencer, 89, of North Knoxville, lost her battle with COVID on New Year’s Day. She was the youngest of eleven children born to Adam Grant Oaks and Gertrude Geneva Allred of Union County. She was married to Hugh Spencer for 49 years until his death in 1999. Together they had three children: Gary (Jamie) Spencer, Connie (Jerry) Arnwine, and Carol (John) Stout. She was Mamaw to eight grandchildren: Jeremy and Joshua Arnwine; Adam (Lindsay), Jacob (Lauren), and Islande Stout and Leah (Brandon) Stout Wardlaw; Kate (Hans) Spencer Sowrey and Andrew Spencer. Each one was her “favorite.” She also had 17 “Greats” that she loved. The delicious holiday meals she prepared and served will long be remembered by her family. The cakes and pies were comparable to none. She was a member of Washington Pike Baptist Church for over 55 years where she taught Sunday School and sang in the choir. She retired from Gateway Hardware. We would like to thank the staff at NHC North for the love and care they gave her over the past 3 years; and for Caris Hospice who provided additional care over the past year. They treated Miss Ruby with dignity and respect. To honor our Mom’s memory, we are asking that you wear a mask to protect yourself and others from COVID-19.
