Jason Scott Bishop, age 42, of Knoxville, passed away unexpectedly on April 2, 2025, in a tragic accident while working in Chattanooga. Jason was a field relief manager for U-Haul and had worked for them for 8 years. He loved his job and all of his coworkers; Jason was a hard worker but always had time for others needing help. He never met a stranger, always had a bright smile on his face, and could talk to anyone. Jason loved his Vols, the beach, looking for shark teeth and shells, but most of all, his racing go-kart. Jason raced for many years, mostly at his home track, Ashway Speedway, with his son, Jayden, helping and his daughter, Summer, being his #1 cheerleader and his newfound love of throwing darts.
Jason is preceded in death by his father, Terry “Toby” Bishop; brother, Terry Bishop, Jr.; grandparents, Edgar Turner, Clarence “Bud” and Betty Bishop, Don and Anna Ruth Mowery; and his close racing friend, Clyde Stanton, who taught him so much about racing karts.
He is survived by his fiancé, Mary JoeAnn Matchett, who he was to have married on May 17th. His mother, Cheryl; his precious children, Jayden and Summer; and her fiancé, Steven Nelson. His bonus children are BreAnn Matchett and Christopher Matchett. His best friends since childhood are Matt Asbury (Tonya) and Jonathon Dennison. They always called each other “brother.” His cousin, Michael Sharp (Kellie), who was more of a brother than a cousin to Jason. Also survived by several aunts and uncles, numerous cousins, and a very large racing family. Jason was loved by so many and will definitely be missed by all.
The family will receive friends on Monday, April 7, 2025, at Mynatt Funeral Home, Fountain City Chapel from 6:00PM to 8:00PM. A graveside service will be held on Tuesday, April 8, 2025, at Greenwood Cemetery at 3:00PM with Rev. David Cash officiating.
