Betty Jean Jackson

October 30, 1928 — January 26, 2021

Betty Jean Barker Jackson, age 92, of Knoxville, Tennessee, passed away Tuesday, January 26, 2021 at the University of TN Medical Center. She was predeceased by her parents, Charles and Lena Lawson Barker. She is survived by daughter, Dr. Becky Jackson (Donna Fielden); sons, Stuart Jackson (Barb) and Steve Jackson; grandson Eric Jackson; sister Peggy Griffith (Gerald); and aunt Dorothy Ekvall. Betty was born October 30, 1928 in Corsicana, TX and spent most of her childhood in Gatesville, TX. Even though she moved to Toledo, OH in the early 1950's, she always considered herself a lifelong Texan. After raising three children in Toledo, she moved to Columbus, OH in 1984 where she spent 13 years at the Ohio State University Medical Center as a medical secretary. Upon retiring in 1997, she moved to Knoxville to escape the cold Ohio winters. After retirement, Betty worked tirelessly to develop her gift as a painter. She created many beautiful works and enjoyed sharing them with friends and family. She will also be remembered for her delicious baking, avid gardening and her intense love of several dogs and one cat. The family would like to give special thanks to the providers and staff of UT Hospital. A private family interment ceremony of Betty's ashes will be held in Gatesville, Texas when it can be done safely. Memorial donations may be made to the Young-Williams Animal Center, 3201 Division St., Knoxville, TN 3919 (https://www.young-williams.org) or a charity of choice.
